Watermelon and Baby Spinach Salad

Recipe

Servings: 4

INGREDIENTS

700g watermelon, cut into chunks

200g baby spinach

100g chevin goat’s milk cheese

10g fresh mint leaves

10g fresh basil leaves

30g pine nuts, toasted

Olive oil

Salt and freshly ground black pepper

2 limes, for serving

METHOD

1. Place the watermelon, baby spinach, mint and basil leaves into a large bowl or onto a platter and toss to combine. 

2. Slice or tear the goat’s cheese into half rounds and add to the salad.

3. Sprinkle over the toasted pine nuts, generously drizzle with olive oil and season with salt and freshly ground black pepper. 

4. Serve with fresh lime wedges on the side.
