Beef Teriyaki

Simple and delectable. Sirlon slivers generously coated in glistening teriyaki sauce, garnished with spring onion slices and toasted sesame seeds.

Beef Teriyaki

Recipe

Preparation: 15 minutes

Cooking: +-10 minutes

Ready in: +- 25 minutes

Variations: Substitute sirloin with rump or fillet steak

Servings: 2

Tips: Serve the beef teriyaki over steamed white rice or sesame noodles.

Cooking guideline based on 3cm thick steak

Rare: 4 minutes on each side

Med-rare: 5 minutes on each side (recommended)

Medium: 6 minutes on each side

Well-done: Not recommended

INGREDIENTS

2 x 250g sirloin steaks

Sesame seed oil

2 spring onions, sliced, for garnish

1 Tbsp sesame seeds, toasted, for garnish

Salt and freshly ground black pepper

Teriyaki sauce:

1/3 cup soya sauce

1/2 cup water

3 Tbsp Mirin

2 Tbsp sugar

2 garlic cloves, crushed

2cm piece fresh ginger, thinly sliced

1/2 onion, peeled and left whole

1 Tbsp cornflour (Maizena)

Freshly ground black pepper

METHOD

1. Heat a small saucepan to a medium-high heat, add all the teriyaki sauce ingredients except for the cornflour and bring to the boil.

2. Mix the cornflour with a 1/4 cup of water, stir the mixture into the sauce and simmer for 5 to 10 minutes or until thickened.
3. In the meantime, season the sirloin steaks well with salt and freshly ground black pepper.

4. Add sesame seed oil to a griddle pan and heat until smoking hot. Cook the sirloin to your preference (medium-rare is recommended), see cooking guideline above and adjust the time according to the thickness of your steaks.

5. Leave the meat to rest for half its cooking time.

6. Finish the teriyaki sauce by removing the onion and ginger slices and season with freshly ground black pepper.

7. Slice the beef into thin slivers and generously pour the glistening teriyaki sauce on top of it. Garnish with sliced spring onions and toasted sesame seeds and serve.
